Job Summary

Reporting to the Production Kitchen Nutrition Services Supervisor, the Ingredient Control Clerk manages the food and non-food inventory of the Production Kitchen and weighs ingredients for standardized recipes. 

Duties & Responsibilities

  • Control inventory of all production kitchen food and non food items. 
  • Place food orders following quantities specified on production sheets. 
  • Maintain food usage records and reports this information to the Production Kitchen Nutrition Services Supervisor as required.
  • Review all deliveries to the Production kitchen, for order accuracy, requirements and specifications. 
  •  Ensure any product that does not meet quality specifications is stored in a safe manner until pick-up by the vendor takes place.
  • Complete inventory, following established par levels.  
  • Rotate stock using the First In First Out method. 
  • Ensure product specifications are communicated to all others working in the Ingredient Control area. 
  • Plan and organizes each workday based on the needs of the operation as reflected in the production sheets which are reviewed at least two weeks in advance. 
  • Weigh ingredients for all standardized recipes.
  • Ensure all internal and external requisitions are filled and delivered accurately.
  • Resolve product issues with vendors. 
  • Maintain the cleanliness and safety of the Ingredient Control area and equipment.
  • Follow safe food handling guidelines.
  •  Use CBORD Food Services Suite software as required for completion of duties.
  • Perform other duties as assigned.

Skills & Qualifications

Essential

  • Secondary school diploma as well as post secondary education in Chef or Cook Certification or Culinary Management .
  • Current Food Handler’s Certification .
  • Understanding of the Residents’ Bill of Rights and Compliance Standards as set out by the Ministry of Health and Long Term Care. 

 

Peferred

  • Self-motivated.
  • Good attention to detail.
  • Strong problem-solving skills.
  • Time management skills. 
  • Strong computer skills including MS Word, Excel and Outlook and experience using CBORD.
  • Previous experience in a long-term care home.

Working Conditions

  • Must be able to perform all the necessary physical tasks associated with the position including lifting up to 50 lbs. 
  • Considerable amount of time spent in refridgerators and freezers.

 

Employment Conditions

  • Current (obtained within the past six (6) months), original and acceptable Criminal Records Check, by the first day of employment.
  • Current (obtained within the past six (6) months) two-step tuberculosis test or Quanti-FERON-TB Gold plus test by the first day of employment.
