Job Summary

Reporting to the Receiving Kitchen Nutrition Services Supervisor, the Cook maintains a sanitary kitchen and prepares food according to standards set out in the Fixing Long-Term Care Act and Regulations. 

Duties & Responsibilities

  • Prepare food at the receiving kitchen of a long term care home according to standardized recipe, to ensure food quality, safety and quantity.
  • Review incoming food for order completeness and for damage.
  • Check ingredient quality and amounts in a recipe prior to preparation and prepares and handles food following stringent food safety practices.
  • Co-ordinate with other team members to ensure that all products are produced and sorted in a timely manner as per the receiving kitchen production sheets.
  • Document all information required to assess food temperature and food quality. Ensures that all products are labeled with appropriate expiry date.
  • Participate in testing of new products within a team environment.
  • Act as the liaison with resident serveries and promotes timely and effective communications in this role.
  • Maintain cost awareness in ordering, receiving, preparation and storage of products, with an emphasis on food quality, inventory, safety and waste.
  • Complete inventory.
  • Report to the team and supervisor any quality issues perceived or otherwise in a timely manner, to ensure timely resolution and appropriate follow up.
  • Review and maintains production sheets using CBORD Food Service Suite software. 
  • Plans and organizes each workday based on the needs of the operation as reflected on the unit service menus.
  • Act as Lead Hand during supervisor’s absence to ensure staffing needs met in all servery/receiving kitchen areas and production kitchen areas.
  • Clean and sanitizes storage areas, food processing area and equipment.
  • Promote teamwork by providing input to the decision-making process governing day-to-day operations, to prevent delays in providing quality service and products to residents.
  • Utilize skills and abilities when required to work in other service areas.
  • Perform other related duties as assigned.
     

Skills & Qualifications

Essential

  • Diploma or certificate in chef training or culinary management; or a certificate of qualification as Cook; or a post-secondary diploma in food and nutrition management; or a post-secondary degree in food and nutrition.
  • Current Food Handler’s certificate.
  • Minimum of two years’ experience in quantity food preparation.
  • Ability to operate quantity food production equipment.
  • Understanding of the Residents’ Bill of Rights, and Compliance Standards as set out by the Ministry of Long-Term Care.

 

Preferred

  • Knowledge of CBORD Food Service Suite software.
  • Experience with cook chill food production.
     

Working/ Employment Conditions

Working Conditions:  

  • Lifting, pushing and pulling up to 30 pounds
  • Flexibility in work schedule including every other weekend is required.

 

Employment Conditions: 

  • Current (obtained within the past six (6) months), original and acceptable Criminal Record Check, including a Vulnerable Sector Screen.
  • Current two-step tuberculosis test (obtained within the past six (6) months) by your first day of employment
